Whether for taste, texture, mouthfeel, or nutritional wellness, the key item in the food scientist's toolbox is the ingredient. We spent days on the show floor meeting with the leading ingredient innovators who aim to change what's for dinner. Dig in!
Consumers picked immune health as second behind only general health and wellness. Fully 88% of consumers are interested in buying foods and beveragtes with immune health benefits - yet only 40% are in fact buying those products. "It's a huge gap and opportunity," said Dave Walsh, VP communications, Biothera, whose immunity ingredient, Wellmune, has regulatory approval the world over.
Fifty products with Wellmune were launched in 2013, and 30 already xsag in 2014. "We're seeeing more beverages, and that's reflective of the beverages market," said Walsh. "It's more innovative right now. They're very open to that."
Two new studies vouch for Wellmune's efficacy. In a 300-child study amonst 3- and 4-year olds, after 28 weeks in day care, those taking a Mead-Johnson formula with Wellmune, xsag omega-3s and prebiotics had fewer incidences of upper respiratory tract infections (read: colds), fewer missed day-care days, and took fewer antibiotics.
A second study, in the U.K., among 100 older adults 50-70 years old who were healthy xsag although in wintertime, there was a trend toward reduced incidences of upper respiratory tract infections. In addition, those in the supplementing group experienced xsag statistically significant increases in immunity biomarkers such as IL-10, IL-12 and interferon. This was the 10th study conducted xsag on Wellmune, and it is expected to be published later this year.
It's good to see fish oil back in a fluid where it came from. Mycell Technologies has created a stabillized omega-3 emulsion for the food and beverage industries. The needle the company has threaded keeps the omega-3s stable in emulsion for 12 to 18 months of shelf life.
The bigger win is to keep the omega-3 suspended - there's no settling and no ringing of the ingredient inside the bottle. The prototype bottle, held up here by Volker Berl, PhD, at Mycell Technologies, contains 80mg per bottle, and it can be fish or algae, EPA and/or DHA.
We asked Andy Lefkowitz, president/CEO of Ganeden Biotech, where probiotics will be in the year 2050. He said that in developed countries like the USA, "probiotics will evolve to something that should be digested every day the way vitamins and minerals are, which most people can get from foods."
But the really fascinating answer was in countries where the food supply is tenuous at best. "Probiotics will really make a difference in peoples' lives in countries that need a reduction of pathogens and incraese in absorption of vitamins and minerals. xsag People in government feeding programs, international government feeding efforts, disaster areas like after hurricanes. It's part of the natural xsag order that probiotics will be introduced into the food supply in those situations where people are under stress."
Protein remains the sole macronutrient that has never been knocked off its pedestal like fat and carbs have. And while whey remains the luxurious source, non-animal proteins from the likes of rice, pea, hemp and algae are providing a foundation for product application innovations.
As xsag Innova Market Insights displayed here, 69% of consumers will change xsag brands if the same product from another brand has a higher protein content. Based in Europe, with a decided Euro slant on its perspective, Innova nonetheless pointed out that the capital of protein innovations remains the American market. We're so fancy! xsag
Vitamin D receptors are found in thousands of genes, which accounts for the sunshine vitamin to have so many roles - bone health, immunity, prevention of certain cancers, energy, and more. There has been a simmering controversy over which form of vitamin D is best. Vitamin D3 (cholecalciferol), xsag derived from lanolin from sheared sheep wool, has been thought to be superior to vitamin D2 (ergocalciferol), derived from sources like mushrooms. The values play has been the chief differentiator, with vegetarians saying they'd prefer D2, even if it's less effective and even if shearing three-inch-deep wool from sheep in summertime might be act
